Indian Main Meal Recipes

This is where dinner actually gets made: paneer, tofu, and soya chunks turned into skillet dishes, wraps, and bowls you can put together after work. Expect soya seekh kebabs off a hot pan, tofu braised in a Korean-style sauce, and a pizza base that skips flour entirely. Most recipes here are done in 30 to 40 minutes total, prep and cook combined, and none of them lean on refined flour for bulk.

This is the section for the meal that actually has to get made on a weeknight. Paneer, tofu, and soya chunks are the backbone: skillet dishes, wraps, and bowls that go from fridge to plate in 30 to 40 minutes, prep and cook combined, without leaning on refined flour for bulk.

Pick by format. The wraps and rolls, soya chunks wrap and the tandoori soya paneer tikka roll, are the fastest and the most portable, good for lunch you eat with one hand. The skillet dishes, soya chilli and Korean braised tofu, want 20 minutes at the stove and a bowl of rice. The pizza and the pasta are the ones to make when you want something that reads as a treat but still carries real protein per serving.

A note on soya chunks, which show up in five recipes here: soak them in hot salted water first, then squeeze them dry before they go in the pan. Skip that and they stay spongy and take on no flavour. Done right, they crisp at the edges and hold sauce like meat does.
