Sugar-Free & Maida-Free Indian Sweets

Dates, jaggery, and whole-grain flours do the sweetening and the structure instead: ragi (finger millet) in the chocolate cupcakes, moong dal in the laddus, roasted chickpeas in the fudge, whole wheat and jaggery in the chocolate cake.

Choose by how much time and equipment you have. The no-bake set, mango cheesecake, the fudge, the chocolate balls, and the millet crunches, needs only a blender and fridge space, and most are done in under 20 minutes of hands-on work. The baked recipes, ragi cupcakes and the jaggery chocolate cake, need an oven and about 25 minutes in it. The laddus sit in between: air-roasted, shaped by hand, no baking.

Jaggery behaves differently from sugar when you cook with it. It carries more moisture and a slight caramel note, so a jaggery cake stays denser and browns faster than a white-sugar one. Watch the oven a few minutes earlier than a standard recipe would tell you to.
